Effect of lysozyne on the recovery of heated Clostridium botulinum spores.
نویسندگان
چکیده
Lysozyme in the recovery medium increased the recovery of heated spores, thereby raising the measured heat resistance of type E Clostridium botulinum spores about 1,800-fold and type A spores up to 3-fold.

Characterization of Clostridium botulinum spores and its toxin in honey
Botulism is a serious paralytic disease caused by Clostridium botulinum toxin in foods. There are seven recognized serotypes of botulinum neurotoxins among which the principal prevalent types in humans include A, B and E. Infant botulism results from intestinal colonization and toxin production by C. botulinum spores in babies less than 1 year old. Honey is the most important food discriminated...
متن کاملEffects of carbohydrates, proteins, and bacterial cells in the heating media on the heat resistance of Clostridium sporogenes.
It is well known that the heat resistance of bacterial spores is influenced markedly by the nature of the medium in which the spores are heated. This fact is an important problem relating to the practical sterilization in bacteriology and in the food industry. Hence voluminous data on the heat resistance of Clostridium botulinum and Clostridium porogenes in various kinds of foods or food juices...
متن کاملGrowth and toxigenesis behavior of Clostridium botulinum type E in Persian sturgeon (Acipenser persicus) Caviar prepared with various preservatives
Growth behavior of Clostridium botulinum type E beluga was studied in Acipenser persicus granular caviar treated with 5% NaCl, 5%NaCl plus 0.3% boric acid and 0.4%borax and 5%NaCl plus 0.15% methyl paraben incubated at temperatures -2, 5 and 15 °C for 224 days. The initial number of inoculated bacterial spore was 5.1×104 cfu/g caviar in each treated sample. The number of bacterial spores in sam...
متن کاملاسپور کلستریدیوم بوتولینوم و آلودگی قارچی در عسل های تولیدی ایران
Introduction: Microorganisms may be present in the form of spores, in honey. One of these dangerous organisms is the bacterium Clostridium botulinium spores which are capable induced botulism particularly in infants. The aim of this study was to determine the prevalence of Cl. botulinum spores in honey produced in different regions of Iran. Method: This cross-sectional study was performed in...
متن کاملEffect of acid and salt concentration in fresh-pack pickles on the growth of Clostridium botulinum spores.
The addition of various amounts of acetic acid to pureed cucumbers inoculated with Clostridium botulinum spores has shown that outgrowth is inhibited at pH 4.8 but not at pH 5.0. Inoculation experiments with whole cucumbers showed that as little as 0.9% acetic acid in the brine was sufficient to prevent outgrowth from spore inocula as high as 10(6)/cucumber. It was further shown that the rapid ...
